Plantain Waffles 

Gluten-, Grain-, Nut- and refined sugar free

Ok, who else loves waffles? Are there human beings on this planet who really don't like waffles? Is this even possible?

Whatever! For everybody who loves waffles: these ones will blow your taste buds! Who said delicious is not going well with healthy options? I doubt this :) So these goodies are not only nourishing for your inner child, but also a total healthy paleo dream without heavy to digest grains and nuts.

You'll need:

  • 5 green plantains

  • 5 large eggs

  • 5 tbsp maple syrup (you can add more or less)

  • 8 tbsp coconut oil (liquid)

  • 2 heaped tsp baking powder

  • ~ 2 tsp cinnamon (I added more, because I love it)

  • ~ 1/2 cup sparkling water

Step 1: Preheat your waffle iron. Peel your plantains and cut them in some pieces. Put all the ingredients in a blender except for the sparkling water. Mix well until you have a smooth batter. The dough will be pretty thick.

Step 2:Add the water little by little, blend everything again in between. Add as much water as needed. Your batter should not be too runny, but also not too thick. Find a good middle way. You can also experiment with the consistency. I like my waffles pretty thick, so I don't use that much water. Just runny enough to pour easily into the waffle iron.

Step 3: Grease your waffle iron with coconut oil and pour in your dough. Make sure your iron is not too hot, so the waffles have time to cook completely through.

Step 4: While the waffles are cooking one after another prepare your desired toppings. In my case homemade chocolate + coconut sauce and bananas. Be creative :)

Step 5: ENJOY! :)
